Shelbyville, TN - Grindstone Cowboy, the popular restaurant, coffee shop, and music venue in Eagleville, Tennessee, is set for a significant expansion with the unveiling of its second location in Shelbyville. The announcement follows a groundbreaking event held on January 13th, which garnered enthusiastic support from the Shelbyville community.

Anticipated to open its doors at 100 Spring Street in fall 2025, the new Shelbyville location underscores the success of Grindstone Cowboy's original establishment in Eagleville. Leading the expansion are husband-and-wife musicians Mindy and Craig Campbell, who have seen remarkable success with their weekly events like open mic night, bingo, and trivia at the Eagleville site.
 
Grindstone Cowboy aims to cater to a diverse clientele by offering a wide array of options, including a substantial breakfast and lunch menu, signature lattes, wine and beer on tap, and specialty cocktails. The establishment was initially founded by the Campbells with the vision of creating a welcoming community space in Eagleville. By combining a restaurant, coffee shop, bar, and music venue all under one roof, Grindstone Cowboy provides a gathering place for local families, students, and musicians to enjoy delicious food and beverages while supporting a small business.
 
The new Shelbyville location will operate from Monday to Friday, 6 a.m. to 4 p.m., and Saturdays from 7 a.m. to 3 p.m. On nights when concerts or events are scheduled, the venue will extend its hours until 10 p.m., offering patrons ample opportunities to indulge in live music and entertainment.
