Three Generations, One Campus: Demos’ Family Legacy Comes Home to MTSU

Murfreesboro, TN - MTSU’s Student Union was buzzing with excitement Monday morning as students lined up—literally out the door—for the grand opening of Demos’ Restaurant’s newest location in the Food Court of the Student Union Building.  The first 100 students received swag bags packed with goodies and coupons. One lucky student, Peyton Norris, walked away with a “golden ticket,” good for one free meal each day that the restaurant is open this fall semester.

The event was more than just a ribbon-cutting—it was a homecoming. Peter and Kristin Demos, both proud MTSU alumni, shared heartfelt remarks alongside university president Dr. Sidney McPhee. The Demos family has been a staple in Murfreesboro’s restaurant scene for over 35 years, with roots in the industry dating back to the 1940s. Now, their oldest son Jamey, a recent college graduate, is stepping into the third generation of this family business as manager of the new campus location.

Students can expect familiar favorites like Demos’ famous chicken and rice soup, fresh rolls, and a variety of pasta dishes with signature sauces. A rotating lunch special is also in the works for September. Kristin emphasized the restaurant’s commitment to serving “real food” that’s fast enough for students on the go but comforting enough to feel like home.

Rachel Hunter from Middle Tennessee Dining echoed the excitement, noting that Italian cuisine consistently ranks high in student surveys. “Demos will be a great addition to campus dining.”

Though located inside the Student Union Building at 1768 MTSU Blvd., the public is also invited to enjoy the new Demos’ location in the SUB’S Food Court.  Demos' will operate Monday through Thursday from 10 a.m. to 5 p.m. during the fall semester.

With Lightning leading the charge and the Demos family bringing decades of tradition to the table, it’s clear this new campus eatery is already a hit.
